Confession #103 – We talked in my challenge group this week about comparison. As in, comparison is the thief of joy.
So darn true, isn’t it?
And yet, I fall victim to comparing myself to others all the time…no matter how much I know I shouldn’t.
Want to know a secret? I sometimes feel like an impostor in the world of food blogging. Especially when it comes to my photos.

You see, I’m just a girl who likes to cook. And eat.
I actually have a fancy camera…and I totally have an interest in photography.
I just lack that one oh-so-important thing…
Yup. Time.
But I somehow always have time to cook.
And eat.
So I will continue to share my meals with you all, and slowly update my old pics when I can. Until then, I appreciate you tolerating my iPhone pics…if you stick with me long enough, you just might see the day where all of my dark and why-on-earth-would-anyone-cook-this photos are long gone.
For now, the best I have for you is these updated pork chops photos topped with my lemony Goat Cheese butter. Which, not to brag, is pretty freaking amazing.
In an instant, your plain pan seared pork chops become restaurant (and drool) worthy when you top them with this creamy and delicious combination of fresh lemon zest, clarified butter, and goat cheese. Let it melt a bit while you are setting the table with your fancy plates…because even though this dinner ready in minutes, it feels like a special occasion.

Pork Chops with Goat Cheese Butter
Ingredients
- 1 teaspoon olive oil
- Olive oil cooking spray
- 1 tablespoons unsalted butter softened
- 1/2 teaspoon grated lemon zest
- Himalayan or sea salt
- Black pepper
- 1/3 cup goat cheese softened
- 4 4-oz boneless pork chops
- Fresh or dried parsley optional
Instructions
- Combine lemon zest, butter, and goat cheese together in a small bowl. Sprinkle with salt and pepper to taste, then set aside.
- Sprinkle both sides of pork chops with salt and pepper. In a large pan, heat olive oil and olive oil cooking spray over medium-high heat.
- Add pork to pan; cook 3 minutes. Turn pork over, reduce heat to medium, and cook until done, about 4 minutes.
- Place pork on a plate and top each pork chop with about 2 teaspoons goat cheese mixture. Sprinkle with fresh or dried parsley, if desired.
- Enjoy!

What other cheese would you sub for goat cheese? Not goat cheese fans in our house but this sounds amazing!

Hmm either cream cheese or feta would be pretty good substitutes. The feta might be a little more tricky to work with though since it is a slightly different consistency. Let us know if you try it!

Hello, how do you know if the pork chops are done cooking? What temperature should they be?

Hi! 160 degrees F is a well done pork chop, but as long as it is 145 or above it is safe to eat. You can cook it anywhere between 145F and 160F, depending on your preference.

Delicious and easy! I used a small 4 oz log of “everything seasoning” goat cheese and it went really well with the pork. My pork chops were very thick and it took much longer to cook, but overall great recipe. Served with rice, more crumbled goat cheese, and salad.

I made this tonight and I’m so glad I did. Not only was it my first time cooking pork chops, but my partner said the goat cheese concoction – as he called it – was godly! Haha needless to say we are impressed with ourselves and full 🙂
