What in the world did we do before Pinterest?
And, more importantly, what did we eat?
So many of my meals are now inspired by my pins, like these Mini Zucchini Pizzas.
Life-changing.
As in, my meataterian husband refers to them as his favorite food. #nojoke
And while we have all had Pinterest fails, this is a big WIN.
Lucky for me, it was also super easy to FIX!

Here’s the mini zucchini pizzas recipe:
Mini Zucchini Pizzas
Ingredients
- 1/3 cup homemade tomato sauce or no sugar added sauce like Rao's
- 1/2 zucchini thinly sliced
- 2 1/2 tablespoons shaved Parmesan and/or shredded mozzarella
- Garlic powder to taste
- Crushed red pepper to taste
- Olive oil spray to taste
- Dried oregano to taste
Instructions
- Set oven to Broil on High.
- Spray with olive oil spray and sprinkle with garlic powder and crushed red pepper.
- Broil for a few minutes until zucchini starts to brown.
- Remove pan from oven and flip zucchini slices. Season again.
- Top each mini pizza with sauce, cheese and sprinkle with oregano.
- Place in broiler again until cheese is melted and golden. Enjoy!

I am noticing in the recipes that the Tomato sauce either isn’t recorded or it is tallied as a green. I was taught that tomato based ingredients count as purple. Also wouldn’t there be a teaspoon or part of one for the spray?

Hi! When using no sugar added tomato sauce, I feel comfortable counting it as a GREEN. But yes, its true that others count it as a purple. Feel free to count it whichever way you feel more comfortable with! The olive oil spray does not count as a tsp, because it is such a little amount – just use sparingly!

Can I use coconut oil spray instead of olive oil. If not, can I use regular olive oil instead of having to buy the spray ? Thanks so much.

I LOVE zucchini as well…I use it for as much as I can think of. Instead of worrying about the tomato sauce though, I used the canned chunk tomato with green chili’s. It already has the flavor and the oregano sets it up! Thank you…I think next time I will add some fresh spinach leaves on them.

Just popped them into my oven, and I am loving the smell already! Hi! I usually measure a 1/2 cup of sliced zucchini using my green container, then I use the other half of my green for the sauce. I use my blue to measure cheese!
