I’m talking brunch with your girlfriends. Long, leisurely brunches with great conversation and maybe it’s nice out and you are languishing in the sunshine together. Maybe you are even wearing a new sundress.
Oooh…remember dresses?
And you are definitely sipping something delicious. When I think of brunching with my girlfriends, I think of fresh fruit, light and bubbly drinks like these Orange Strawberry Mimosas.
Not only are these great for a summertime brunch (or just an ordinary Sunday morning, no judgement), but they’re a hit at bridal showers, a fun girly get together with friends, Mother’s day, Valentine’s day, the list could go on. Really any holiday or celebration where a refreshing pink drink can make the day better. We will all be there soon enough, friends!
Ingredients for this Strawberry Mimosa Recipe
- orange juice – you can use freshly squeezed or store-bought with pulp (If you don’t like pulp you can buy without, but I kind of love it!) and make sure it’s nice and chilled.
- fresh strawberries – frozen strawberries could be substituted but be sure to thaw them or you’ll end up with more of a frozen cocktail as opposed to the classic version. Although that could be a tasty option too! For fresh strawberries, don’t forget to remove their green tops!
- champagne – Brut, Cava, or dry Prosecco are all good options too. Chilled, of course.
How to make Easy Orange Strawberry Mimosas
- Puree your strawberries in a high speed blender or food processor, adding a splash of the fresh orange juice as necessary to properly puree.
- Divide the strawberry mixture evenly into the bottom of 4 champagne flutes.
- Holding your glass at an angle, fill your champagne flute about ¾ of the way with your champagne, Prosecco, Cava, or Brut.
- Top with fresh or store bought orange juice, garnish with a fresh strawberry or an orange slice (or both for maximum drink appeal), serve, and enjoy!
Alternatively, you can blend the strawberries and orange juice together and mix with champagne and serve that way instead of layering the ingredients. Both options are yummy!
How many oranges should I use if I opt for the freshly squeezed version?
It took me about 4 oranges for a batch of 4 cocktails. A cocktail recipe and an arm workout all in one!
Can I make a larger batch to serve at a party or for more guests?
Of course! Just double (or triple) up on your ingredients and you’re ready to please the masses. You can even make the orange juice and strawberry puree ahead of time, and store it in a pitcher. Add in fresh fruit and hold off on the champagne until ready to serve. Pour in the bubbly and there you have it!
Can I make non-alcoholic Strawberry Mimosas?
Absolutely. Instead of champagne, use something with carbonation like a sparkling water. This is a great option if you’ve got kiddos around and you don’t want them to feel left out of the party!
