These 21 Day Fix Baked Oatmeal Cups are my family’s favorite breakfast. Create these gluten and dairy free treats ahead of time with whatever toppings your family loves and give yourself a break in the morning!
This is my first post on my new phone. After my toddler threw my old phone in the bathtub for the fifth time, it finally gave up. The poor thing just had enough abuse.
So I ended up going with the 6+. Trying to give it some time, but it definitely feels enormous and awkward. I thought it would make blogging easier…still not sure about that.
Anyway, I’m so happy for the cloud, as I still had pics of recipes from before that fatal plunge that I never shared.
Like these customizable baked oatmeal cups!
For those who like my French Toast Cups, you must give this recipe a try! Add them to your food prep list so you can enjoy them this week.
They feel like a cheat to me. But that’s not even the best part.
They are totally customizable for the whole family; top with everyone’s favs and you are good to go!
My favorite topping is fresh peaches! My daughter was all about the chocolate chips, and my husband and one year old loved all of them. In fact, these didn’t last more than a day and a half in my house.
So much for prepping!
Where should I store these Baked Oatmeal Cups?
If they do end up lasting longer than mine did, just be sure to store them in the fridge in an airtight container or ziplock bag. They should be good for several days.
Can I freeze these 21 Day Fix Baked Oatmeal Cups?
Yes! These freeze very well and can last up to three months in an airtight container or freezer bag. You can thaw in the refrigerator or warm them in the microwave or oven.
Can I use a different kind of milk in these Oatmeal Cups?
Since my son is dairy free, I used unsweetened vanilla almond milk in these. Coconut milk and low fat dairy milk would also be good options!
How do you count Chocolate Chips on the 21 Day Fix?
If you are on the 21 Day Fix topping these with chocolate chips, you will have to count them as a treat swap. You can have a treat swap three days a week according to Autumn, so plan accordingly!

Hi so 2.5 cups of uncooked oats equals 10 yellows. So it should seem that each muffin would be closer to 1 yellow not 1/2 yellow. Can you please confirm? Thanks!
Nancylynn says
Hi Kristina! 1/3 cup of uncooked oats is 1 Yellow so 2.5 cups is a little over 7 yellows. So that’s how it comes out to be about 1/2 YELLOW per muffin – yes, rounded down slightly!
Lind says
This is a good breakfast for 21df. I actually don’t have a muffin tin, so I baked in a loaf pan and made a bread instead. Worked nicely. I only used 1 cup almond milk, not more and baked 50 min.
Nancylynn says
This is great info, thank you!!
Eri says
Hi! I made this yesterday and it was good, but mines didn’t turn out as brown as yours in your video.
When you say 2 cup of Apple sauce, do you mean 2 measuring cups? Or 2 cups that Apple sauce came with???
I used both banana and apple sauce as you do, but 1cup of apple sauce is a lot more than 1 mushed banana…. mine was so much runny than yours. I didn’t see your apple sauce on your video so I went with 1 measuring cup of apple sauce.
Nancylynn says
Yes – two measuring cups. You can do just all bananas next time and see if that texture feels better for you!
Colleen M Denio says
How many calories are in each muffin? How many grams of protein?
Thank you.
Nancylynn says
Myfitnesspal is a great resource for all of that information!
E. Corso says
This was a great recipe! I doubled it so I can freeze some. I did cut the milk down a little, but good thing to remember it is oatmeal and not a muffin so expect a different texture. Overall wonderful and can’t wait to make again.
Nancylynn says
I am so happy this worked for you! Thank you for the great rating and review!
Jodi Bronner says
Yum! This was my first time making these oatmeal cups. Like other commenters I assumed they would turn out like muffins but actually they are more like oatmeal! They seemed a bit moist on outside.i baked for 26 minutes then kept increasing to 30 minutes to firm them up. We ate them anyway. I put then in fridge in Tupper Ware container. 2 days later I warmed them back up in oven at 350 for 10 minutes and they came out firmer! They are a keeper now!
Nancylynn says
Great – thank you for your comment! I am sure it will be helpful to others, too! ❤️
Rachel says
These are amazing!!!!! Thanks so much for sharing these recipes!
Nancylynn says
Thank YOU, Rachel, for taking the time to comment – it means so much! ❤️
Danielle says
Hi,
I’m on the 21 day fix and struggling because I am sensitive to eggs (but have been eating them anyways) but I know I need protein in the mornings or I am starving by 10am…. I need a grab and go protein and I’m hoping to hide it in something with carbs and fruit like these delicious muffins…. any thoughts on adding protein powder to the recipe? I’m lactose intolerant too unfortunately so yogurt is only an occasional fix. I’ve loved the 21 day fix so far but I just can’t bring myself to eat meat/chicken/fish so early in the morning!
Thanks!
Danielle
Nancylynn says
Hi Danielle! I would be super interested to try this with a FLAX egg and some protein powder…I think it would totally work! I also think this could work with some protein powder or collagen peptides mixed in – https://confessionsofafitfoodie.com/2018/01/instant-pot-oatmeal-21-day-fix/
Lindsey says
Can you substitute the eggs? My son has an anaphylaxis allergy.
Nancylynn says
yes! Try Flax egg!
Kelli says
I realize I’m incredibly late to this party, but can I use pure honey instead of raw honey?
Nancylynn says
Sure can!
Marlana Edwards says
Hmmm…I still had the same problem as several others with the soggy texture, even after the adjustments that were recommended in the comments following the recipe. Followed the ingredients to the letter. I let the mixture sit for 30 minutes before placing them in the oven per the comments. After 30 minutes at 350, I bumped up to 375 for another 7 minutes. (You could tell the batter was still completely raw after 25 minutes at 350). They just finished cooling and are, frankly, kind of disgusting. Just a terrible soggy texture (and I love oatmeal). I wanted to be able to leave positive feedback, but these were a waste of a lot of my time, so I can’t recommend them at all. Really not sure how anyone had success with this recipe. :-/ I do see that a lot of people comment that the recipe looks good, but they haven’t actually made it, so I’m just giving an actual review here.
Nancylynn says
I am sorry to hear this, Marlana! I hope you find a better recipe to suit your taste. Thanks!
Debbie Bullard says
I’m wondering if the issue might be the type/brand of applesauce? Some are ‘wetter’ than others. ?? -db
Jewel Hurst says
Can I add protein powder?
Nancylynn says
I haven’t tried that, but if you do, let us know how it works!
Kelly Heelon says
Made these for the first time last weekend with just applesauce, no bananas. I loved them. They were super moist. I made them again today and I hope they come out just as good as last time because I forgot to add the almond milk! Opps!
Nancylynn says
I am so curious to find out – please report back!
Angela says
Would I be able to replace the almond milk? This is due to allergies.
Nancylynn says
Yes! Use any milk you have on hand!
Jennifer Gallo says
I just made these for the 1st time they were so easy and so good will definitely be adding these to my meal prep!!
Have a happy new year everyone
Nancylynn says
I’m SO glad!! Happy New Year to you guys!! xoxo
Kb says
I have seen a couple other similar recipes and they also said you could substitute canned pumpkin in place of the bananas and/or apple sauce. Would that be suitable for this recipe as well?
Nancylynn says
Yes! I think that would work fine!
Debbie says
Nutrition facts?
Debbie says
Thanks for these awsome muffins…do you have a rough idea what the nutrition facts are?
Nancylynn says
Hi! I use My Fitness Pal for this kind of thing! Just plug in the recipe and it will give you a pretty accurate idea of the nutritional facts!
Rachel says
Thank you! I’m looking for recipes as I’m starting 21 day fix tomorrow and at a loss! What can in substitute for the almond milk – I have a nut allergy. Would b 2% milk be ok?
Nancylynn says
Yes – that’s fine!
Bea says
Has anyone ever done the nutrition information for this recipe?
Sherri says
I’m allergic to bananas. Is there a substitution?
Nancylynn says
You can use applesauce!
Danielle Murray says
My kids would love this! My son is allergic to eggs. What would you suggest in this recipe as an egg substitute?
Nancylynn says
I have never tried this without eggs…I know some recipes call for a flax egg, but I’m not sure if that would work with this? I’ll see what I can find out…
JKinsley says
My son has an egg allergy as well. I made these tonight with two bananas and 1/2 cup applesauce to replace the eggs. It turned out beautifully. We ate one warm right out of the oven.
Nancylynn says
Thank you SO much for sharing – this is going to help so many people!!!
Allison says
Beachbody blog says 1 Yellow, 1/2 Purple.
Nancylynn says
I saw this – I think they changed it recently. I still think two muffins for a yellow makes sense to me.
Jen says
These look great, two weeks in to 21 day fix and looking for some make a heads.. Just wondering if “steel cut” oat would work in this recipe, thats what I have on hand. Thanks
Nancylynn says
I haven’t tried, but I have been SO curious!! I have a feeling that they would…but I would hate for you to waste…
Alex Castelli says
Hi! Did you ever try these with steel cut oats?
Mary Thornton says
I love to try some of your recipe please
Tara says
These were amazing! Mine came out just like muffins. I used a large toaster oven and cooked it a little longer.
I used just bananas and paper muffin cups, but generously oiled each cup. They came out perfectly, they didn’t stick to the paper at all.
Thank you for sharing this! I will start making this every week!
Nancylynn says
YES!!! Thanks for sharing – this will help others for sure!!
Tash says
I realise I’m quite late to the thread, but can I replace the applesauce/banna for greek yogurt? I can’t eat fruit, but would love to try these!
Nancylynn says
I have not tried that, but I think it’s worth a shot!
Tash says
The greek yogurt worked ok, definitely a softer ‘muffin’ but still tasty nonetheless! I only added 1 1/2 cups of yogurt instead f the full 2 cups
Nancylynn says
This is great to know!!!
Ashley says
I was just wondering if your are using fresh banana or if they are more like banan that you would use in a banana bread ?
Nancylynn says
I use whatever I have, but they are best when you use very ripe bananas!
Robyn says
Late to this party but I love the recipe! Could I replace the banana with pumpkin puree do you think? I’m on a pumpkin fix right now. I would count it as a green but some are using purple.
Nancylynn says
Try this one! https://confessionsofafitfoodie.com/2015/10/21-day-fix-pumpkin-oatmeal-muffins/
Sabrina says
Hello i want to know please wath is represent the T in 1T
Thanks you
Nancylynn says
Tablespoon! Enjoy 🙂
Julie says
Wondering if I could make this in a regular pan. I don’t a cupcake pan (I don’t usually bake :))
Nancylynn says
I think that would work out fine!
Brittney Kessler says
About how many calories do you think are in each of these? I will most likely just do the ones with the chocolate chips.
Nancylynn says
Hi! I’m actually not sure, as I don’t count calories (Yay, 21 Day Fix!). You could try plugging the ingredients into my fitness pal – although I’m not sure any online nutrition calculator is perfectly accurate. I am sorry I am not more help! Hope you enjoy the muffins!
Kim says
I am new to 21 day fix..and I wondering..wouldn’t you need to account for the almond milk somehow…isn’t it something like a yellow ?
Nancylynn says
Hi Kim! You don’t need to account for it because it’s only a small amount per muffin. You can have up to 4oz free each day! Yay!
Sunny says
I made these last night with 2 bananas and they came out really good. Thanks
Nancylynn says
That’s great!!
Amanda says
I’m having a very difficult time getting them out of the pan. How long should I let them cool in the pan for before I try to remove them? I followed the recipe with no substitutions and I greased the pan.
Nancylynn says
Definitely allow them to cool awhile – the texture improves as they cool. Use a butter knife to help you get them out if they are sticking…
Shari Beedy says
I can’t wait to try these. They look so yummy!!
Nancylynn says
Yay! Let us know what you think!
Sarah says
Have you used quick oats instead?
Nancylynn says
I have not. This could work, but it might change the texture. If you do try it, let me know!
Elisia says
Do you make the fruit ahead of time? or just put them on the muffins cold? Or do I bake them with the muffins in the oven?
Nancylynn says
Hi! I put the fruit right on top and then bake.
Jess George says
Hey There,
I was just wondering if I could substitute the almond milk for something else? we aren’t big fans of almond milk in my household.
Nancylynn says
Yes! You can use any milk you have on hand :).
Ronaka says
Not sure if you answered this previous or not. But I cant have coconut. What can I use instead of Coconut oil???? Thanks
Nancylynn says
Hi! You can use any kind of oil that works for you!
Kim says
Made these today, super yummy! Even the two year old approves. Can’t wait to make another batch-and I’ll do the mini muffins again for my kiddo. Loved how easy they were to make, and can’t wait to try some other fruits as toppings.
Nancylynn says
That’s great news!!!
Desiree says
These are awesome whether you are a fixer or not!! Whole family loves them
Nancylynn says
That’s awesome! I like to think a lot of my recipes are good for Fixers and non-Fixers!! Thanks for the great feedback!!
Rachael says
Hi! This recipe looks delicious! I’m curious, have you tried using frozen berries on top? Do you think that would effect the final muffin at all? Thanks! 🙂
Nancylynn says
I have and it works great!
Kathy says
I can’t eat almonds or bananas so I’ll be using apple sauce. What an I use instead of almond milk? Coconut milk? Regular milk? Thanks!
Nancylynn says
Either would be fine! I love using coconut milk in baking :).
Abbey says
Do you cook the oatmeal first?
Nancylynn says
Nope 🙂
KC says
Is the batter supposed to be really soupy?
Nancylynn says
Yes!
Raquel says
These oatmeal cups were beyond delish!!! I have been looking everywhere for a healthy oatmeal recipe without using banana and am so happy I have finally come across one that works with applesauce instead. The texture and taste were amazing! (I used a little extra cinnamon in mine!) The only hard part was waiting for them to be ready! I put flax seeds and raisins on the next batch and can’t wait to see how they turn out. Thanks for this great recipe, will definitely be a breakfast staple for us!
Nancylynn says
Thank you SO much for the great feedback!!
Jenn says
Hi, I have a very strict diet for medical reasons. Is there any site that gives the nutrition facts for this recipe?
Nancylynn says
Yes – you can put the ingredients into My Fitness Pal!
Misty Walker says
This may be a stupid question but do you cook the oats first?
Nancylynn says
You use raw oats for this :).
Lynnette says
As someone else noted mine also turned out very, very gummy. I use 1 banana and 1 cup applesauce. I would recommend using much less milk than called for. This wasn’t at all muffin like.
Nancylynn says
Yes – you can try less milk! Mine come out perfect every time. Sorry you didn’t have the same experience. I wonder if it is related to oven differences?
Sharon says
This looks fantastic!
Ingrid says
Would you be able to do this with any other milk? I can’t have soy, or treenut based milks. I usually use lactaid whenever it calls for milk. Would that be okay?
Nancylynn says
Yes!
Jessica says
Hi there! I made these today and mine came out a little gummy in texture…not like a true muffin. I used the two cups applesauce and the mixture seemed really liquidy before I baked them. Is that right? Is it two full measuring cups of applesauce or just two of the mini cups. Thanks in advance for any advice 🙂
Nancylynn says
This hasn’t happened to me…but I wonder if the texture will improve after they cool a bit? The mixture is liquidy, but I typically use one banana and one cup of applesauce. Hmm…I am very sorry!!! Anyone else care to chime in with advice??
Ann says
Let the mixture sit for 20-30 minutes before filling the muffin tins and baking. This gives the oats time to soak up the liquids and gives better results.
Nancylynn says
great tip! i’ll try it!
Sammy Vander Wal says
Mine were also so super gummy afterwards. I even put them back in the oven for another 10+ min to see if they would stiffen up. I felt like I should drastically reduce the amount of milk? I used 2 bananas. Anyone else have this issue?
Gillian says
These look great! Did you bake the fruit if you were using that as a topping?
Nancylynn says
Yes!!
Dessie says
These sound delicious!
How do we factor in the chocolate chips if we choose to use them? I’ve scanned the 21 Day Fix book and haven’t spied anything related to those, but this isn’t the first recipe I’ve come across that uses them and is 21 day fix approved.
Nancylynn says
Hi! If you want to use them, you measure them in the orange container. A whole orange equals a yellow. You will only use a few for each muffin, so it will be a fraction of a yellow for each muffin. Make sense?
April says
Made them today! Have been having a hard time getting in my yellow containers – with these it will be a breeze! Thanks for the recipe!! 🙂
Nancylynn says
Right?? SO happy they were a hit!!
Robin says
Recipe sounds delicious
Bita says
These look tasty and I think I have all the ingredients to give them a try. I will use canola spray oil in the tins instead of the coconut oil (don’t have any)…let’s see how that goes. Thanks for the inspiration! ✨ Bita
Nancylynn says
That will be totally fine!! Enjoy!!
jessica says
how many can you eat per serving per person when on a diet
Leslie says
That depends on the diet. If you’re calorie watching, you can use the nutrition information on your ingredients to find each muffins calorie count (different flavors will vary) and then calculate how many you can have.
It’s the same way if you’re doing the 21 day fix, but using the serving amount she lists instead of the calorie counts.
jessica says
they look really good , just started 21 day fix diet and looking for different ideas .How many can you eat per serving?
Nancylynn says
Hi! 2 equals one yellow 🙂
Ashley says
Yum! How long are these good for in the refrigerator?
Nancylynn says
Up to a week! But you can also freeze them.
Chelsea says
Any recommendations on thawing them? These are delicious! But I’d like to bake a whole bunch at once!
Nancylynn says
You could easily thaw overnight in the fridge or even warm them in the microwave! Easy and perfect to freeze ahead!
Juanita says
Great recipe! I just made these this morning. I do have one question. Has anyone ever tried adding protein powder to these? Just curious as to how it would turn out.
Alexis says
Hi! My mom and I actually made these tonight. Do you need to refrigerate them or can we wrap them and leave them out?
Nancylynn says
I usually put them in the fridge, but you can leave them out if they are wrapped well!!
Lisa says
I thought I saw mini somewhere and made them in the mini muffin pans and got almost 36 of them….but I am now assuming it is regular size muffins????
Nancylynn says
Yes! So you can eat more 🙂
Kelsey Bouler says
How many does it make?
Nancylynn says
a dozen!
Erlene says
These look really good. Do you just place them in the refrigerator for the week and eat cold? Pinned.
Nancylynn says
Hi! We eat them cold, warm, room temp! You name it 😉 Let me know how they work out for you!
Robbie says
So is it safe to leave them at room temp?
Nancylynn says
Yes! But I do tend to store mine in the fridge so they last longer.
Kim says
Love the 21DayFix recipe and so easy…making these this weekend:)
Nancylynn says
Thank you!!! I hope you enjoy them!!!
Kelly @jackandparker says
Oh– I will try these for sure. What a great idea! I’m not doing the 21-day fix, but I like this just as a eat-at-my-work-desk breakfast.
Nancylynn says
Yes! All of my recipes are great for anyone wanting to eat healthy. Thanks so much for your comment!
Holly says
Since there are 2 eggs in it, how come there is no red cup counted for 21 fix? Just making sure since I am trying to follow the fix closely.. thank you!!
Nancylynn says
Hi there! It’s because it would be 1/6 red for every 2 muffins…just seems too little to count! Make sense?
Beth says
I am new to eating healthy, but this sounds really delicious! Seems like a perfect recipe to start turning my life around with.
Nancylynn says
Love this!! A great way to kick off the day and get a healthy start!!
Tammy says
I love this recipe. I have GERD, so I need recipes that are more alkaline to the stomach and this one certainly is. I would have to stick with a couple of toppings though. I have been wanting to use coconut oil but was afraid it tastes like coconut. Does it have that taste? Thanks
Nancylynn says
It has a mild coconut taste that I love! But feel free to substitute any other cooking oil or spray! My son has GERD, so I totally understand. No fun! I hope you enjoy these! Thanks so much!
Clover says
No it doesn’t mam. I put it in my coffe tea smoothies and i fry eggs with it too. U never even know it’s there.
Danielle says
No coconut taste at all I use it all the time and hate coconut
Dee says
I use fool cupcake liners and no need to spray.
Nicole (Nicole's Lifestyle Lounge) says
I think my daughter would love this recipe.
Nancylynn says
Great!! Thanks so much for your comment!!
Jennifer McCurdy says
I’m always looking for portable on-the-go breakfasts to take on my morning walks. These would be perfect. Thanks for the great idea!
Nancylynn says
Thank you for your comment!! Enjoy!!
Shari Beedy says
What can I do about the soggy centers in my muffins. I even tried cooking them longer and that didn’t help. I used banana/applesauce in mine. I see I am not the only one with this problem. Thanks for any help.
Nancylynn says
Since this is a baked oatmeal cup, it won’t have the same texture as a true muffin. That being said, every oven is different. Have you tried to increase the temp? That might help. I find that the texture of mine improves as it cools and they aren’t soggy.
angalina sanborn says
do you use a mini muffin tin or regular? I’m wondering if a mini muffin tin would help with th eissue
CC says
My first batch also had gooey centers. The next time that I made them, I decreased the amount of milk and that seemed to work.
Nancylynn says
Thanks for the help!
Catarina says
I would like to make these for the first time. How much milk did you end up putting in it?
Pat says
Can I use soya milk
Nancylynn says
Sure!
