New York Strip Steak is a great lean beef option for the 21 Day Fix. Here are three recipes to make New York Strip Steak at home on your grill, in your air fryer, or on your stovetop, finishing in the oven.
My husband and I love a good steak – especially on a date night or a weekend evening if we can manage to get the kids down early and enjoy a quiet dinner alone (unicorn status). I love that we can get a restaurant style meal on the table without much work using this simple New York strip recipe.
Although I love different cuts of steak, and tend to go with a Filet Mignon for really special nights, we received two New York Strip Steaks in one of our Butcher Box orders and I was surprised how much we loved them! It’s a new favorite for us! You can also easily find NY Strip Steaks at your local grocery store.
What is a New York Strip Steak?
A Strip Steak or New York Strip steak comes from the short loin of the cow. While it’s not as tender as filet, it is tender enough to be cooked quickly and not be tough or chewy. It has incredible flavor, and it also tends to be lean, which is perfect for the 21 Day Fix. Look for a steak that is at least 1.5 inches thick, and between 8-10 oz for the best results. The NY Strip Steaks from Butcher Box were 10 oz. and cooked up beautifully.

Ingredients:
This is such an easy recipe for any home cook because steaks are seasoned simply with salt and pepper, and a little oil and a little butter for flavor, while also keeping the steaks FIX approved. I promise you can get a flavorful steak without a stick of butter! And these steaks aren’t marinated, but you can choose to marinate New York Strip steaks using a balsamic vinegar marinade like the one in my Flank Steak with Arugula and Shaved Parmesan Salad.
You will need:
- 2 Strip Steaks (about 8 oz each and at least 1.5 inches thick) You can also use Ribeye or Filet Mignon
- coarse Kosher or sea salt
- coarse ground black pepper
- 2 tsp olive oil or avocado oil
- 1 tsp salted butter or ghee
How to Cook the perfect NY Strip Steak:
There are countless ways you can cook a New York steak, as it’s a very versatile cut of meat, and there are different opinions on which way is the best way.
This post will cover three simple ways to cook your steaks: grilling your steak, air frying your steak, or cooking your steak on your stovetop, then finishing in a hot oven. The key to all of these steak recipes is cooking at high temperatures and using a meat thermometer to check the internal temperature to ensure a juicy steak cooked to your liking.
Read through the following, then pick your favorite cooking method and you will be on your way to perfect steaks in no time.
How to Grill NY Strip Steak:
We love to grill steak because it’s quick, easy, and keeps the kitchen clean.
- Prep: 30 minutes prior to cooking, remove your steaks from the refrigerator, dry with a paper towel. Allow steaks to come to room temperature before grilling.
- Preheat grill on high – you want a hot grill. Brush both sides of each steak with 1/2 tsp olive oil and season well with salt and pepper – really rub it in.
- When the grill is hot, place the steaks diagonally on the grill (think 10 o’clock). Cook for 2-3 minutes. Next, turn the steak to 2 o’clock on the grill so you get those criss cross marks and let steaks cook for an additional 2-3 minutes.
- Flip and repeat on the other side. **This is for perfect medium rare. See notes in the recipe card for more temperature info.
- Transfer the steaks to a plate and add 1/2 tsp of butter to each steak. Let steak rest for 5 minutes before slicing. Serve.
How to Cook New York Strip Steak on the Stovetop and Oven:
Did you know you can bake New York Strip Steak? It’s true! This simple method sears the steaks stovetop in a cast iron skillet, then finished by baking in the oven.
- Prep: 30 minutes prior to cooking, remove your steaks from the refrigerator, dry with a paper towel. Allow steaks to come to room temperature before cooking.
- Preheat oven to 400 degrees. Heat a cast-iron skillet over medium high heat until it is hot, but not smoking. (be sure to have your vent fan on as I always manage to set off the smoke detector if I forget!)
- While the skillet is heating up, brush both sides of each steak with 1/2 tsp olive oil and season well with salt and pepper – really rub it in.
- Place steaks into the hot skillet and cook for 2-3 minutes, without turning to allow a nice sear. Turn the steaks with tongs and cook for another 2-3 minutes.
- Remove from heat and immediately place in the preheated oven. Bake in the oven for another 4-7 minutes, or until the desired temperature is reached. (I do about 5 minutes for medium rare)
- **See notes below for more temperature info. Transfer the steaks to a plate and add 1/2 tsp of butter to each steak. Let steak rest for 5 minutes before slicing. Serve.
Air Fryer (Or Mealthy CrispLid | Ninja Foodi):
Can I make New York Strip Steak in the Air Fryer?
Yes! Just follow the Air Fryer method in the recipe card! We do this all the time here because it’s quick and doesn’t make a mess of the kitchen.
- Prep: 30 minutes prior to cooking, remove your steaks from the refrigerator, dry with a paper towel. Allow steaks to come to room temperature before air frying.
- Preheat Air fryer to 400 degrees. Brush both sides of each steak with 1/2 tsp olive oil and season well with salt and pepper – really rub it in.
- Place in your Air Fryer for 10 minutes, flipping halfway (this is for medium rare). Increase or decrease cooking time as needed to reach ideal internal doneness. **See notes below for more temperature info.
- Transfer the steaks to a plate and add 1/2 tsp of butter to each steak. Let steak rest for 5 minutes before slicing. Serve.
What is the right internal temperature for steaks?
It depends on how you like to eat your steak – we prefer medium rare – but the notes in the recipe section will give you temperature guidelines to shoot for based on how well done you like your meat. Also, I cannot stress enough about how a digital meat thermometer changed my cooking game! If you don’t have one, get one!
