Easy and flavorful, this healthier hibachi fried rice is the perfect side dish for my hibachi steak and hibachi chicken recipes! Made with leftover rice, you could even throw it together and top with your favorite protein; we love it with everything from this air fryer shrimp and my pan fried salmon to this Asian pork tenderloin!
Ever since I posted pictures for my Hibachi Steak Recipe with a side of fried rice, you all have been asking for a healthier hibachi fried rice recipe and I couldn’t be happier to finally deliver! My version of Japanese fried rice uses leftover brown rice – tip, freeze your brown rice so you can make this anytime – fresh veggies, and way less oil than a hibachi restaurant, but I promise you, it’s still so yummy!
So let’s add to the homemade hibachi experience with another healthier copycat recipe!
Ingredients
For full ingredients and amounts, be sure to check the recipe card below! For this recipe, you will need:
- brown rice, cooked and cooled – Day-old rice works really well for hibachi style rice. Of course you can also use white rice, but I prefer less processed brown for a little extra fiber.
- eggs – I love some scrambled eggs in my fried rice, but they can be easily omitted for egg free.
- avocado oil (or sub additional butter) – Restaurants typically use vegetable oil, but I prefer using avocado oil or even olive oil.
- butter (vegan butter for dairy free) – We are cutting down on the butter here – using just enough for flavor.
- carrots and onions – I prefer fresh veggies for this, but you could also use frozen mixed veggies for a shortcut. I use white onion or yellow onion.
- fresh garlic and fresh ginger – In a pinch you can use ground ginger and garlic powder.
- frozen green peas -Easy to leave out if you prefer.
- coconut aminos or tamari – Both of these sauces are a great gluten free substitute for soy sauce and coconut aminos is also soy free. If you are not gluten-free, you can sub low sodium soy sauce.
- drizzle of sesame oil – For that signature flavor.
- salt – Depending on your ingredients – like if you use unsalted butter or salted butter – you will need to taste your finished rice and potentially add additional salt.
- garnish – Sliced green onions are my favorite flavorful garnish to use but you can also sprinkle it with sesame seeds.
Substitutions and Variations
- Add in extra veggies – green beans, diced bell peppers, or diced broccoli florets would all be delicious. For 21 Day Fixers, it would be easy to double the amount of veggies to make this a full green! Tip: If you add extra veggies, saute them separately so that you don’t crowd the pan and you can get a good crisp on your rice.
- Make this a complete stir fry meal by adding grilled chicken breast, shrimp, or your favorite marinated tofu.
- Make my homemade yum yum sauce to drizzle on your rice – YUM!
- If you have a Blackstone griddle or flat top grill, this is a great recipe to make on it because you can make everything all at once instead of breaking it into steps! I LOVE my Blackstone!
- Frozen mixed vegetables would be a good substitution for fresh if you have a bag to use or if you are short on time.
- Any rice – including jasmine rice or regular white rice – could be used for this recipe. You could also use quinoa!
Step by Step Instructions
- Heat ½ tsp of butter in a large skillet or wok over medium-high heat. Add eggs to the hot pan and scramble, stirring occasionally until cooked through. Remove from pan and set aside.
2. Add another 1 tsp of butter to the pan and heat until melted, then add in onions and carrots. Sprinkle with salt and pepper, and cook until soft, about 5 minutes, adding in 1-2 Tablespoons of water, if needed. Stir in garlic and ginger and cook for an additional minute. Sir in frozen peas.
3. Add 2 tsp of butter and 2 tsp avocado oil to the pan, increase heat to high, then immediately add in the rice to the hot skillet. Season with ¼ tsp of salt. Saute 3-5 minutes to fry the rice. I like to give the rice time to crisp up at the bottom of the pan so I don’t stir too much.
4. Stir in coconut aminos and allow flavors to combine. Add eggs and continue to stir until eggs are warmed and well incorporated. Remove from heat.
5. Drizzle with ½ tsp of sesame oil and garnish with green onions. Taste and add additional salt, if needed.
Expert Tips
- Did you know? Using cold rice is critical for fried rice! If you use warm, recently cooked rice, it will end up getting mushy in your pan and could result in the rice clumping together. For best results, use rice that has been precooked and placed in your refrigerator and your fried rice will take on the signature crispiness.
- My favorite way to meal prep rice is this Instant Pot Brown Rice! It’s freezer friendly, too, so great to grab if you need a quick dinner side or prepared rice for this yummy recipe.
Recipe FAQs
Yes – if you really want to make this recipe, follow these tips to get your rice cooled quickly. After your rice has cooked, grab a sheet pan and spread the rice out into a thin layer. Place the sheet pan in your refrigerator or freezer for 20 minutes to allow your rice to properly cool.
I am all for using what you have. We should note, for readers following the 21 Day Fix, that only brown rice is on the food list. The calories and macros are fairly comparable, though.
My hibachi chicken or hibachi steak would be amazing, but you could also make this honey glazed salmon or use leftover air fryer whole chicken for this recipe.
What To Serve With Fried Rice
I created this recipe to go with my Hibachi Chicken and Yum Yum Sauce or my Hibachi Steak Recipe! But it would also be delicious as a side dish to many of my recipes including Instant Pot Beef and Broccoli, Honey Glazed Salmon, or my Crock Pot Asian Chicken.
You could also add protein such as cubed chicken breast, pork, or tofu to make this a complete meal!

Hibachi Fried Rice
Ingredients
- 2 ½ cups brown rice cooked and cooled

- ½ onion diced
- 2 cloves garlic minced
- 1 Tbsp fresh ginger minced
- ½ cup frozen peas
- 4 Tbsp coconut aminos
- ½ tsp sesame oil
- salt
- green onions finely sliced

*if you add extra veggies like cauliflower rice and broccoli like we did do it seperate. The pan gets crowded and the rice (used leftover cold) takes longer to crisp.
